Photoshop CS3 would be officially Photoshop 10; the most significant changes I've seen happen over the years have been in the addition of filters, styles, web tools, text support, and in this last version, video support. So it has come a long way, particularly in terms of integration with other graphics and media applications.
If you're a relative newbie, you could certainly gain significant orientation from MacProVideo's tutorials; just know that the version changes have impacted workflow methods, ie: web graphics, ImageReady has been discontinued in favor of incorporating Flash, Fireworks and Dreamweaver more. If you're not a web person, this would not affect you as much.
